  • 2 cups chopped spinach
  • 1 (8-ounce) package udon noodles

Directions

  • Step 1
    In a large pot, bring the chicken broth to a boil over medium-high heat.
  • Step 2
    Reduce the heat to low and stir in the miso paste, soy sauce, mirin, ginger, and garlic powder.
  • Step 3
    Add the mushrooms and spinach and simmer for 5 minutes.
  • Step 4
    Add the udon noodles and simmer for 5 minutes more, or until the noodles are cooked through.
  • Step 5
    Serve hot.
