Rainbow Roll Sushi

Ingredients (2 Persons)
- 2 cups sushi rice
- 1/2 cup seasoned rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 4 sheets nori
- 1 large avocado, thinly sliced
- 1 large cucumber, thinly sliced
- 4 ounces cream cheese, thinly sliced
Directions

Step 1
In a medium saucepan, bring 2 cups of sushi rice with 2 1/2 cups of water to a boil over high heat. Reduce the heat to low, cover the saucepan, and simmer for 15 minutes.

Remove the pan from the heat and let the rice sit, covered, for 10 minutes. Uncover the pan and fluff the rice with a fork.

In a medium bowl, mix together 1/2 cup of seasoned rice vinegar, 2 tablespoons of sugar, and 1 teaspoon of salt until the sugar and salt dissolve.

Add the cooked rice to the bowl of seasoned vinegar and mix together until the rice is evenly coated.

Lay a sheet of nori on a sushi mat and spread 1/4 of the rice mixture onto the nori, leaving a 1-inch border on the edges.

Arrange 1/4 of the avocado slices, cucumber slices, and cream cheese slices on top of the rice.

Roll the sushi mat away from you, using both hands to press the ingredients together in the roll. Repeat with the remaining ingredients.
