Lamb Rogan Josh Curry

Lamb Rogan Josh is an Indian curry dish made with lamb, tomatoes and spices. It is a classic Kashmiri dish and is often served as part of a meal. The name Rogan Josh is derived from the Persian word “Rogan”, which means red, and “Josh”, which means passion or heat. The red color of the curry comes from the Kashmiri red chilli powder used in its preparation. The lamb is usually cooked in a tomato-based sauce and flavoured with ginger, garlic, cumin, and other spices. The dish is usually served with naan, chapatti, or steamed basmati rice.

Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 2 onions, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons ginger, grated
  • 2 tablespoons garam masala
  • 2 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 2 pounds boneless lamb, cut into 1-inch cubes
  • 1 cup canned diced tomatoes
  • 1 cup plain yogurt
  • 1/4 cup fresh cilantro, chopped

Directions

  • Step 1
    Heat the oil in a large skillet or pot over medium-high heat. Add the onions and cook until softened and lightly browned, about 5 minutes.
  • Step 2
    Add the garlic, ginger, garam masala, cumin, turmeric, coriander, chili powder, paprika, cinnamon, and cardamom and cook for 1 minute, until the spices are fragrant.
  • Step 3
    Add the lamb to the skillet and cook for 5 minutes, stirring occasionally.
  • Step 4
    Add the tomatoes, yogurt, and 1/2 cup of water. Stir to combine and bring the mixture to a simmer. Reduce the heat to low and cook for 30 minutes, stirring occasionally, until the lamb is tender.
  • Step 5
    Stir in the cilantro. Serve over hot cooked basmati rice or naan bread.
