Sweet Potato Curry

- 1 large onion, diced
- 2 tablespoons minced garlic
- 2 tablespoons minced ginger
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 2 large sweet potatoes, peeled and diced
- 1 can (14.5 ounces) diced tomatoes
- 1 can (14 ounces) coconut milk
- 1/2 cup vegetable stock
- 1/4 cup chopped fresh cilantro

Heat the oil in a large skillet over medium-high heat. Add the onion and cook until it is softened and lightly golden, about 5 minutes.
