Hainanese Chicken Rice

Hainanese Chicken Rice is a popular dish originating from Hainan province, China. It is a simple dish of boiled chicken served with fragrant rice cooked in chicken stock. The dish is served with accompaniments such as cucumber slices, coriander, chilli sauce or ginger-scallion sauce. The dish has become popular in many countries around the world, including Singapore and Malaysia.

Ingredients (2 Persons)

  • 2 quarts water
  • 2 tablespoons oil
  • 1 (2-3 pound) whole chicken, cut up
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons ginger, minced
  • 1 teaspoon white pepper
  • 1 teaspoon salt
  • 2 tablespoons sesame oil
  • 1 teaspoon sugar
  • 2 cups jasmine rice, rinsed

Directions

  • Step 1
    Bring the water to a boil in a large pot over high heat. Add the oil, chicken, onion, garlic, ginger, white pepper, and salt. Reduce the heat to low, cover, and simmer for 25 minutes.
  • Step 2
    Remove the chicken from the pot and let it cool. Strain the cooking liquid and reserve 1 cup of the liquid.
  • Step 3
    In a medium saucepan, heat the sesame oil over medium heat. Add the sugar and stir until it is dissolved. Add the reserved cooking liquid, stir to combine, and bring to a gentle simmer. Reduce the heat to low and add the jasmine rice. Simmer, stirring occasionally, for 15 minutes, or until the rice is tender.
  • Step 4
    Slice the chicken and serve with the jasmine rice and your favorite sauces and condiments.
