Vegan Sushi Burrito

Ingredients (2 Persons)

  • 4 cups cooked sushi rice
  • 4 sheets nori
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • 1 carrot, julienned
  • 1/2 cup vegan mayo
  • 1 teaspoon sriracha (optional)

Directions

  • Step 1
    Lay a sheet of nori on a clean surface. Spread 1 cup of the cooked sushi rice in an even layer on top of the nori, leaving a 1-inch border around the edge of the nori.
  • Step 2
    Arrange the avocado, cucumber, and carrots in the center of the rice. Spread the vegan mayo and sriracha, if using, over the top.
  • Step 3
    Fold in the sides of the nori, then roll the sushi burrito up tightly, using the sushi mat to press the burrito together.
  • Step 4
    Repeat with the remaining nori, cooked sushi rice, and fillings.
  • Step 5
    Serve the sushi burritos with pickled ginger, wasabi, and soy sauce, if desired.
