Jamaican Curry Chicken

Ingredients (2 Persons)

  • 2 pounds boneless, skinless chicken breasts, cubed
  • 1 onion, diced
  • 2 tablespoons olive oil
  • 2 tablespoons curry powder
  • 1 teaspoon allspice
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (14.5 ounce) can coconut milk
  • 2 tablespoons brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium-high heat. Add the chicken and onion, and cook until the chicken is no longer pink and the onion is tender, about 5 minutes.
  • Step 2
    Stir in the curry powder, allspice, ginger, cinnamon, cayenne pepper, and garlic. Cook for 1 minute, until the spices are fragrant.
  • Step 3
    Add the diced tomatoes, coconut milk, brown sugar, salt, and pepper. Bring to a simmer, reduce the heat to low, and cook for 15-20 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded together.
