Chickpea & Spinach Curry

Ingredients (2 Persons)

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 (14 ounce) can coconut milk
  • 1 cup vegetable broth
  • 2 cups baby spinach

Directions

  • Step 1
    Heat a large skillet over medium heat. Add the onion and cook for 4-5 minutes, until softened.
  • Step 2
    Add the garlic and ginger and cook for 1 minute, until fragrant.
  • Step 3
    Stir in the cumin, coriander, turmeric, and cayenne pepper and cook for 1 minute, until fragrant.
  • Step 4
    Add the diced tomatoes, chickpeas, coconut milk, and vegetable broth to the skillet. Bring the mixture to a simmer and cook for 10 minutes.
  • Step 5
    Stir in the baby spinach and cook until it is wilted, about 4 minutes.
  • Step 6
    Serve with cooked rice, naan, or other accompaniments of your choice.
