Egg Nigiri Sushi

Egg Nigiri Sushi is a type of sushi that consists of a small oval-shaped mound of sushi rice topped with a slice of cured egg. Ingredients (2 Persons)

  • 4 cups cooked Japanese-style white rice
  • 4 large eggs
  • 3 tablespoons rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons mayonnaise
  • 2 tablespoons toasted sesame seeds (optional)

Directions

  • Step 1
    In a medium bowl, whisk together the rice vinegar, sugar, and salt until the sugar and salt are dissolved.
  • Step 2
    Add the cooked rice to the bowl and use a spatula or wooden spoon to gently fold the rice and vinegar mixture together. Set aside.
  • Step 3
    In a medium skillet, cook the eggs until they are soft-boiled, about 5 minutes. Peel and slice the eggs into thin strips.
  • Step 4
    To assemble the nigiri sushi, take a handful of the rice and press it into a small oval shape. Place a strip of egg on top of the rice and press it down lightly. Sprinkle with toasted sesame seeds, if desired.
