Pakistani Chicken Curry

Ingredients (2 Persons)

  • 4 skinless, boneless chicken breasts, cut into small pieces
  • 2 tablespoons ghee or vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 (14.5 ounce) can diced tomatoes

Directions

  • Step 1
    Heat the ghee or oil in a large skillet over medium-high heat. Add the chicken and cook until it is no longer pink, about 5 minutes.
  • Step 2
    Add the onion, garlic, and ginger to the skillet and cook until the onion is soft, about 5 minutes.
  • Step 3
    Stir in the coriander, cumin, turmeric, garam masala, and cayenne pepper (if using). Cook for 1-2 minutes, until the spices are fragrant.
  • Step 4
    Add the diced tomatoes and 1 cup of water to the skillet. Bring the mixture to a simmer and cook for 15-20 minutes, or until the chicken is cooked through.
