Coconut Shrimp Curry

Ingredients (2 Persons)

  • 2 pounds large shrimp, peeled and deveined
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup shredded coconut
  • 2 tablespoons vegetable oil
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 1/2 cup chopped fresh cilantro

Directions

  • Step 1
    In a large bowl, mix together the flour, garlic powder, salt, and black pepper. Add the shrimp and toss to coat.
  • Step 2
    Heat the vegetable oil in a large skillet over medium heat. Add the shrimp and cook until golden and just cooked through, about 2 minutes per side.
  • Step 3
    Remove the shrimp from the skillet and set aside. Add the curry powder and turmeric to the skillet and stir for 1 minute.
  • Step 4
    Add the coconut milk and chicken broth to the skillet and bring to a simmer. Simmer for 5 minutes, stirring occasionally.
  • Step 5
    Add the cooked shrimp and shredded coconut to the skillet and stir. Simmer for 1 minute.
  • Step 6
    Stir in the cilantro and season with salt and pepper to taste. Serve over cooked rice or noodles.
