Vegetarian Chickpea and Spinach Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 cup vegetable broth
  • 1/2 cup plain Greek yogurt
  • 2 cups baby spinach

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the coriander, cumin, turmeric, ginger, and cayenne pepper (if using). Cook for 1-2 minutes until fragrant.
  • Step 3
    Add the tomatoes and their juices, chickpeas, and vegetable broth. Bring the mixture to a simmer and cook for 5-10 minutes, until the sauce has thickened.
  • Step 4
    Stir in the Greek yogurt and baby spinach. Cook for 2-3 minutes, until the spinach is wilted.
