Vegan Sushi Burrito with Cucumber and Radish

Ingredients (2 Persons)

  • 4 cups cooked sushi rice
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 cucumber, cut into thin strips
  • 2 large radishes, cut into thin slices
  • 1 avocado, sliced
  • 4 sheets of nori seaweed

Directions

  • Step 1
    In a small bowl, combine the rice vinegar, sugar, and salt. Mix until the sugar and salt are dissolved.
  • Step 2
    In a large bowl, combine the cooked sushi rice and the vinegar mixture. Stir until the rice is evenly coated with the mixture.
  • Step 3
    Lay a sheet of nori seaweed on a flat surface. Spread 1/4 of the sushi rice in the center of the nori, leaving a 1-inch border on all sides. Arrange 1/4 of the cucumber, radish, and avocado slices on top of the rice.
  • Step 4
    Fold the ends of the nori over the filling and roll it into a tight burrito shape. Gently press the ends of the nori to seal the burrito.
  • Step 5
    Repeat with the remaining ingredients to make 3 more burritos.
