Easy Egg Curry

Ingredients (2 Persons)

  • 4 eggs
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 tomato, diced
  • 1/2 cup coconut milk

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, cumin, coriander, turmeric and cayenne pepper, and cook for 1 minute.
  • Step 3
    Add the tomato and cook for another 2 minutes.
  • Step 4
    Add the coconut milk and bring to a simmer. Gently crack the eggs into the pan and cook for about 5 minutes, until the eggs are cooked through.
  • Step 5
    Serve with cooked rice or naan bread.
