Saag Curry

Ingredients (2 Persons)
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1/2 teaspoon ground cardamom
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper (optional)
- 1 pound frozen spinach, thawed and squeezed dry
- 1 cup plain yogurt
- 1/4 cup heavy cream

Step 1
Heat the oil in a large skillet over medium-high heat. Add the onion and cook until it is soft and translucent, about 5 minutes.

Add the garlic, ginger, cumin, coriander, turmeric, cardamom, salt, and cayenne pepper, if using. Cook for 1-2 minutes, until the spices are fragrant.

Add the spinach to the skillet and cook for 10 minutes, stirring occasionally, until the spinach is tender.

Stir in the yogurt and cream. Reduce the heat to low and simmer for 10 minutes, stirring occasionally, until the sauce is thick and creamy.
