Vegan Tofu Curry
Vegan Tofu Curry is a savory, flavor-packed vegan dish made with tofu, vegetables, and a delicious blend of Indian spices. Ingredients (2 Persons)
- 1 tablespoon coconut oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper (optional)
- 1 (14-ounce) can coconut milk
- 1/2 cup vegetable broth
- 1 (14-ounce) block extra-firm tofu, drained and cut into cubes
- 1 large sweet potato, peeled and cubed
- 1 red bell pepper, diced
- 1 cup frozen peas
- Salt and black pepper, to taste

Step 1
Heat the coconut oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

Stir in the garlic, ginger, curry powder, cumin, coriander, and cayenne pepper (if using). Cook for 1 minute, until the spices are fragrant.

Pour in the coconut milk and vegetable broth and bring to a simmer. Add the tofu, sweet potato, and bell pepper. Simmer for 15-20 minutes, until the sweet potato is tender.

Stir in the frozen peas and season with salt and pepper, to taste. Simmer for an additional 5 minutes, until the peas are warmed through.
