Vegetable Roll Sushi

Vegetable Roll Sushi is a popular dish in Japanese cuisine. It consists of sushi rice, vegetables, and sometimes other ingredients, such as fish or meat, wrapped in a thin sheet of nori seaweed. It is usually served as an appetizer, but can also be served as a main course. This type of sushi is typically lower in calories and fat than other types of sushi, making it a healthier option.

Ingredients (2 Persons)

  • 2 cups cooked sushi rice
  • 1/4 cucumber, sliced into thin strips
  • 1/4 avocado, sliced into thin strips
  • 1/4 red bell pepper, sliced into thin strips
  • 1/4 carrot, peeled and cut into thin strips
  • 4 sheets nori (dried seaweed)
  • 2 tablespoons sesame seeds

Directions

  • Step 1
    Lay a sheet of nori on a flat surface. Spread 1/2 cup of cooked rice over the nori in an even layer, leaving a 1-inch border along the edge.
  • Step 2
    Arrange the cucumber, avocado, bell pepper, and carrot strips in a line down the center of the nori sheet.
  • Step 3
    To roll the sushi, start at one end and lift the nori up and over the filling. Using your fingers, press down lightly to seal the edge.
  • Step 4
    Continue rolling until the entire sushi roll is sealed. Use your hands to gently shape and press the roll until it is even. Sprinkle some of the sesame seeds on top of the roll.
  • Step 5
    Repeat with the remaining nori sheets, filling, and sesame seeds.
