Korean Fish Cake Stew

Ingredients (2 Persons)

  • 1 pound of fish cakes
  • 4 cups vegetable broth
  • 3 tablespoons soy sauce
  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 onion, sliced
  • 1 carrot, sliced
  • 1/2 cup sliced mushrooms
  • 2 green onions, sliced

Directions

  • Step 1
    Heat a large pot over medium-high heat. Add the fish cakes and cook until lightly browned, about 5 minutes.
  • Step 2
    Add the vegetable broth, soy sauce, gochujang, sugar, garlic, and ginger to the pot and stir to combine. Bring the mixture to a boil.
  • Step 3
    Add the onion, carrot, mushrooms, and green onions to the pot. Reduce the heat to low and simmer for 15 minutes, until the vegetables are tender.
  • Step 4
    Serve the stew hot with rice or noodles.
