Indian Dal

Ingredients (2 Persons)
- 1 cup dried split yellow peas or moong dal
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 2 green chilies, chopped (optional)

Step 1
Pick over the split peas and rinse several times until the water runs clear.

Place the split peas in a medium saucepan and cover with 4 cups of water. Bring to a boil, reduce the heat and simmer, covered, for 25 minutes.

Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for 1 minute more.

Add the coriander, cumin, turmeric, garam masala, and green chilies (if using) and cook for 30 seconds, stirring constantly, until fragrant.

Add the cooked split peas to the skillet and stir to combine. Add 1/2 cup of water, bring to a simmer, and cook for 10 minutes. Serve with warm naan or rice.
