Vegan Coconut Curry

Ingredients (2 Persons)

  • 1-2 tablespoons oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne (optional)
  • 1 can coconut milk

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion and cook until it is softened and beginning to brown, about 5 minutes.
  • Step 2
    Add the garlic and ginger and cook for 30 seconds, until fragrant.
  • Step 3
    Add the curry powder, cumin, coriander, turmeric, and cayenne (if using) to the skillet and cook for 1 minute, stirring constantly.
  • Step 4
    Add the coconut milk and stir to combine. Bring the mixture to a simmer and cook for 10-15 minutes, stirring occasionally, until the sauce is thickened and fragrant.
  • Step 5
    Serve the curry over cooked rice or your favorite grain.
