Uyghur Lamb Stew

Ingredients (2 Persons)
- 2 tablespoons canola oil
- 2 pounds boneless lamb, cut into 2-inch cubes
- 2 onions, diced
- 1 tablespoon minced garlic
- 1 tablespoon ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground black pepper
- 2 cups chicken broth
- 1 cup canned diced tomatoes
- 1/2 cup tomato paste
- 1/2 cup dried apricots, chopped
- 2 tablespoons fresh lemon juice
- 1/4 cup chopped fresh cilantro

Heat the oil in a large pot over medium-high heat. Add the lamb and cook, stirring occasionally, until browned, about 5 minutes.

Add the onions and garlic and cook until softened, about 3 minutes.

Stir in the cumin, coriander, turmeric, and black pepper. Pour in the chicken broth and stir to combine.

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 hour, stirring occasionally.

Stir in the diced tomatoes, tomato paste, apricots, and lemon juice. Cover and simmer for 30 minutes.
