Uyghur Lamb Stew

Uyghur Lamb Stew is a traditional dish of the Uyghur people of Xinjiang, China. It is a spicy stew made with mutton, carrots, potatoes, onions, garlic, and other spices. The stew has a unique flavor that comes from the combination of spices and the long cooking time. The dish is often served with steamed nan bread and is a popular dish for special occasions.

Ingredients (2 Persons)

  • 2 tablespoons canola oil
  • 2 pounds boneless lamb, cut into 2-inch cubes
  • 2 onions, diced
  • 1 tablespoon minced garlic
  • 1 tablespoon ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground black pepper
  • 2 cups chicken broth
  • 1 cup canned diced tomatoes
  • 1/2 cup tomato paste
  • 1/2 cup dried apricots, chopped
  • 2 tablespoons fresh lemon juice
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the oil in a large pot over medium-high heat. Add the lamb and cook, stirring occasionally, until browned, about 5 minutes.
  • Step 2
    Add the onions and garlic and cook until softened, about 3 minutes.
  • Step 3
    Stir in the cumin, coriander, turmeric, and black pepper. Pour in the chicken broth and stir to combine.
  • Step 4
    Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 hour, stirring occasionally.
  • Step 5
    Stir in the diced tomatoes, tomato paste, apricots, and lemon juice. Cover and simmer for 30 minutes.
  • Step 6
    Stir in the cilantro and season with salt and pepper to taste. Serve hot.
