Vegetarian Coconut Lentil Curry

Vegetarian Coconut Lentil Curry is a delicious and nutritious vegan meal that can be enjoyed as a main course or side dish. This curry is packed with flavour and nutrition, thanks to the combination of lentils, coconut milk, and an array of spices. It is also easy to make and can be customized to suit your taste buds. Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 1 can (14 ounces) coconut milk
  • 1 1/2 cups vegetable broth
  • 2 cups red lentils, rinsed and drained
  • 2 cups diced sweet potatoes
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons freshly squeezed lime juice

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, turmeric, cumin, coriander, garam masala, paprika, cinnamon, and cayenne pepper (if using). Cook for 1 minute, until fragrant.
  • Step 3
    Add the coconut milk, vegetable broth, lentils, sweet potatoes, and diced tomatoes. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 25-30 minutes, until the lentils and sweet potatoes are tender.
  • Step 4
    Stir in the cilantro and lime juice. Taste and adjust the seasonings as needed. Serve with basmati rice or naan bread.
