Malaysian Nasi Lemak
Malaysian Nasi Lemak is a traditional Malaysian dish consisting of fragrant rice cooked in coconut milk, served with a variety of accompaniments such as fried anchovies, peanuts, hard boiled eggs, cucumber slices, and a spicy-sweet chili paste. Ingredients (2 Persons)
- 4 cups cooked jasmine rice
- 4 tablespoons coconut milk
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 onion, diced
- 2 tablespoons red curry paste
- 1 tablespoon fish sauce
- 1 can (14.5 ounces) coconut milk
- 1 tablespoon brown sugar
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/2 cup peanuts, chopped
- 2 hard-boiled eggs, peeled and halved
- 1/2 cup chopped fresh cilantro
Directions

Step 1
In a large bowl, combine the cooked rice, coconut milk, and salt. Mix until combined and set aside.

Heat the oil in a large skillet over medium heat. Add the garlic and onion and cook for 1-2 minutes, until the onion is just beginning to soften.

Stir in the red curry paste and fish sauce and cook for 1-2 minutes, until fragrant.

Add the coconut milk, brown sugar, turmeric, ginger, cinnamon, and cardamom to the skillet. Bring the mixture to a simmer and cook for 5-10 minutes, until the sauce has thickened.

Add the cooked rice to the skillet and stir to combine. Cook for 3-5 minutes, until the rice is heated through.

Garnish the rice with peanuts, hard-boiled eggs, and cilantro. Serve warm.
