Malaysian Nasi Lemak

Malaysian Nasi Lemak is a traditional Malaysian dish consisting of fragrant rice cooked in coconut milk, served with a variety of accompaniments such as fried anchovies, peanuts, hard boiled eggs, cucumber slices, and a spicy-sweet chili paste. This dish is often considered to be the national dish of Malaysia and is a popular breakfast option throughout the country. Ingredients (2 Persons)

  • 4 cups cooked jasmine rice
  • 4 tablespoons coconut milk
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 can (14.5 ounces) coconut milk
  • 1 tablespoon brown sugar
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/2 cup peanuts, chopped
  • 2 hard-boiled eggs, peeled and halved
  • 1/2 cup chopped fresh cilantro

Directions

  • Step 1
    In a large bowl, combine the cooked rice, coconut milk, and salt. Mix until combined and set aside.
  • Step 2
    Heat the oil in a large skillet over medium heat. Add the garlic and onion and cook for 1-2 minutes, until the onion is just beginning to soften.
  • Step 3
    Stir in the red curry paste and fish sauce and cook for 1-2 minutes, until fragrant.
  • Step 4
    Add the coconut milk, brown sugar, turmeric, ginger, cinnamon, and cardamom to the skillet. Bring the mixture to a simmer and cook for 5-10 minutes, until the sauce has thickened.
  • Step 5
    Add the cooked rice to the skillet and stir to combine. Cook for 3-5 minutes, until the rice is heated through.
  • Step 6
    Garnish the rice with peanuts, hard-boiled eggs, and cilantro. Serve warm.
