Coconut Vegetable Curry

Coconut Vegetable Curry is a flavorful and fragrant dish made with a variety of vegetables cooked in a creamy coconut-based sauce. This dish is very popular in India, but it is also enjoyed in many other parts of the world. It is a great way to get your daily dose of vegetables and is also very easy to make. Serve it with some warm naan or basmati rice to create a delicious and comforting meal.

Ingredients (2 Persons)

  • 3 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14 oz) diced tomatoes with juice
  • 1 can (14 oz) coconut milk
  • 1 cup vegetable broth
  • 1/2 pound potatoes, peeled and diced
  • 1/2 pound carrots, peeled and diced
  • 1/2 head cauliflower, cut into florets
  • 1/2 cup frozen green peas

Directions

  • Step 1
    Heat the oil in a large skillet or wok over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, curry powder, cumin, turmeric, coriander, cinnamon, and cayenne pepper (if using). Cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Add the diced tomatoes with their juices, coconut milk, and vegetable broth to the skillet. Increase the heat to medium-high and bring the mixture to a simmer.
  • Step 4
    Add the potatoes, carrots, and cauliflower to the skillet. Return the mixture to a simmer and cook until the vegetables are tender, about 10 minutes.
  • Step 5
    Stir in the frozen peas and cook for an additional 5 minutes, until heated through.
