Roasted Cauliflower Curry

Ingredients (2 Persons)
- 1 medium head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon minced ginger
- 1 teaspoon garam masala
- 1 teaspoon ground turmeric
- 1/2 teaspoon cayenne pepper
- 1 can diced tomatoes
- 1 can full-fat coconut milk
- 1/2 cup vegetable broth
- 1/4 cup chopped fresh cilantro
Directions

Step 1
Preheat the oven to 425°F. Line a baking sheet with parchment paper.

Place the cauliflower florets on the baking sheet and drizzle with the olive oil. Sprinkle with salt and pepper, and toss to coat.

Roast for 20-25 minutes, stirring once halfway through, or until the cauliflower is golden brown and tender.

Meanwhile, heat a large skillet over medium heat. Add the cumin and coriander seeds and toast for 1-2 minutes, until fragrant.

Add the onion and cook for 3-4 minutes, until softened. Stir in the garlic, ginger, garam masala, turmeric, and cayenne pepper, and cook for 1 minute more.
