Vegan Curried Tofu and Kale

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14-ounce) package extra-firm tofu, drained and cubed

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the cumin, coriander, turmeric, garam masala, ginger, and cayenne pepper (if using). Cook for 1 minute, until the spices are fragrant.
  • Step 3
    Add the tofu and cook until golden, about 5 minutes.
  • Step 4
    Add the kale and cook until wilted, about 5 minutes.
  • Step 5
    Stir in the coconut milk and season with salt and pepper to taste.
  • Step 6
    Serve over cooked rice or quinoa.
