Vegetarian Sushi Hand Pies

Ingredients (2 Persons)
- 1 tablespoon vegetable oil
- 1 small onion, diced
- 1 clove garlic, minced
- 1 (8 ounce) package mushrooms, diced
- 1/2 cup cooked sushi rice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground ginger
- 2 tablespoons soy sauce
- 1/4 cup frozen peas
- 1/4 cup frozen corn
- 4 sheets puff pastry
Directions

Step 1
Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.

Heat the oil in a skillet over medium heat. Stir in the onion and garlic, and cook until softened, about 5 minutes. Add the mushrooms and cook until they are softened and lightly browned, about 5 minutes more.

Stir in the cooked sushi rice, salt, pepper, ginger, and soy sauce. Cook until heated through, about 2 minutes. Add the peas and corn, and cook until heated through, about 2 minutes more. Remove from heat and let cool for 10 minutes.

Cut each sheet of puff pastry into 4 equal pieces. Place a spoonful of the filling onto each piece, then fold the pastry over and crimp the edges to seal. Place the hand pies on the prepared baking sheet.

Bake in the preheated oven until the pastry is golden brown, 15 to 20 minutes.
