Carrot and Pea Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon red pepper flakes
  • 2 cups carrots, diced
  • 2 cups frozen peas
  • 1/4 cup vegetable broth
  • 1 can (14.5 ounce) crushed tomatoes
  • Salt and pepper to taste

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, curry powder, cumin, cinnamon, turmeric, and red pepper flakes and cook for 1 minute, stirring constantly.
  • Step 3
    Add the carrots and peas and cook until the vegetables are tender, about 5 minutes.
  • Step 4
    Stir in the broth, crushed tomatoes, and salt and pepper. Bring the mixture to a simmer, reduce the heat to low, and cook for 10 minutes, stirring occasionally.
  • Step 5
    Serve with cooked rice or naan bread, if desired.
