Garlic Curry

Masala Garlic Curry Masala is an Indian spice blend that is used to add flavor and aroma to curries, stews, and other dishes. The blend consists of a variety of spices such as coriander, cumin, cardamom, cinnamon, turmeric, and chili powder. The addition of garlic gives the blend a unique and pungent flavor that enhances the flavor of the dish.

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground cardamom
  • 1 (14-ounce) can coconut milk
  • 1 cup vegetable broth
  • 2 cups cooked chickpeas
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the garlic, ginger, curry powder, cumin, coriander, red pepper flakes, turmeric, and cardamom and cook for 1 minute, stirring constantly.
  • Step 2
    Add the coconut milk, vegetable broth, chickpeas, and frozen peas. Bring the mixture to a simmer and cook for 10-15 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded together.
  • Step 3
    Stir in the cilantro and season with salt and pepper to taste. Serve over cooked rice, noodles, or your favorite grain.
