Vegan Sweet Potato and Lentil Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups vegetable broth
  • 2 cups diced sweet potatoes
  • 1 cup dry lentils
  • 1 large tomato, diced
  • 1/2 cup coconut milk
  • 1/4 cup chopped fresh cilantro (optional)

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the garlic and onion and cook until the onion is softened, about 5 minutes.
  • Step 2
    Stir in the curry powder, cumin, coriander, turmeric, ginger, paprika, cayenne pepper (if using), salt, and black pepper. Cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Add the vegetable broth, sweet potatoes, and lentils to the pot and bring to a simmer. Cook for 15-20 minutes, or until the sweet potatoes and lentils are tender.
  • Step 4
    Stir in the tomato, coconut milk, and cilantro (if using). Cook for another 5 minutes, or until the tomato is softened.
  • Step 5
    Serve the curry warm, with your choice of cooked grains or naan bread.
