Beetroot Curry

Beetroot Curry is a traditional Indian dish that is made by cooking diced beetroot in a spiced mix of onion, tomatoes, garlic, and ginger. Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon cayenne pepper
  • 2 medium beetroots, peeled and diced
  • 1 cup vegetable broth
  • 1 (14.5 oz) can diced tomatoes
  • 1/2 cup coconut milk
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh cilantro (for garnish, optional)

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Add the ginger, cumin, coriander, turmeric, cardamom, cayenne pepper, and beetroots and cook for 3-4 minutes, stirring occasionally.
  • Step 3
    Add the vegetable broth, diced tomatoes, and coconut milk to the skillet. Bring the mixture to a simmer, reduce the heat to low, and simmer for 10-12 minutes, until the beetroots are tender.
  • Step 4
    Season with salt and pepper, to taste. Garnish with fresh cilantro, if desired, and serve.

Amazing! This Beetroot Curry was a hit! I substituted coconut milk for excess water and it came out full of flavour. Highly recommend!
