Oshinko Maki Sushi

Oshinko Maki Sushi is a popular type of sushi in Japan. It is made with pickled daikon radish, which is wrapped in seaweed and then rolled with sushi rice and other ingredients. The daikon radish gives the sushi a unique crunch and flavor, making it a favorite among sushi lovers. The sushi is often served with a side of soy sauce, wasabi, and pickled ginger. Ingredients (2 Persons)

  • 4 cups cooked sushi rice
  • 1/2 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 8 sheets nori, cut in half
  • 1/2 English cucumber, cut into thin strips
  • 1/2 cup pickled oshinko (Japanese pickled radish)

Directions

  • Step 1
    In a small bowl, mix the rice vinegar, sugar, and salt until the sugar and salt have dissolved.
  • Step 2
    Put the cooked sushi rice in a shallow bowl, and pour the vinegar mixture over the top. Using a spatula, gently fold the vinegar mixture into the rice until it is evenly distributed.
  • Step 3
    Lay a piece of nori on a sushi mat, shiny side down. Spread 1/4 cup of sushi rice over the nori, leaving about 1/2 inch of space at the top. Arrange 8 thin strips of cucumber and 4 strips of pickled oshinko in a line in the center of the rice.
  • Step 4
    Lift the end of the sushi mat closest to you, and use it to roll the nori and filling into a tight cylinder. Use the mat to press the roll firmly into shape. Repeat with the remaining ingredients.
