Vegan Chickpea and Sweet Potato Curry

- 1 onion, diced
- 3 cloves garlic, minced
- 2 teaspoons freshly grated ginger
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 (14-ounce) can diced tomatoes
- 2 cups vegetable broth
- 2 sweet potatoes, peeled and cubed
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1 (14-ounce) can coconut milk
- 1/4 cup chopped fresh cilantro
- Salt and pepper, to taste
Directions

Step 1
Heat the olive oil in a large saucepan or Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes.

Add the garlic, ginger, coriander, cumin, turmeric, garam masala, paprika, and cayenne pepper and cook, stirring, until fragrant, about 1 minute.

Stir in the diced tomatoes, vegetable broth, sweet potatoes, and chickpeas. Bring the mixture to a simmer and cook, stirring occasionally, until the sweet potatoes are tender, about 15 minutes.
