Indonesian Sate Ayam

Indonesian Sate Ayam is a popular dish in Indonesia. It consists of chicken skewers marinated in spices and grilled on an open fire or charcoal grill. Ingredients (2 Persons)

2 lbs. skinless, boneless chicken thighs, cut into 1-inch cubes
2 cloves garlic, minced
1 teaspoon ground coriander
1 teaspoon ground turmeric
1 teaspoon ground ginger
1 teaspoon curry powder
1 teaspoon ground cumin
2 tablespoons brown sugar
2 tablespoons fish sauce
2 tablespoons vegetable oil
1/4 cup coconut milk
1/4 cup creamy peanut butter
1 tablespoon lime juice
Salt and pepper, to taste
Skewers for grilling

Directions

Step 1

In a large bowl, combine the chicken, garlic, coriander, turmeric, ginger, curry powder, cumin, brown sugar, fish sauce, oil, coconut milk, peanut butter, lime juice, salt and pepper.
Step 2

Mix until all ingredients are well combined. Cover and let marinate in the refrigerator for at least 30 minutes.
Step 3

Preheat a grill or grill pan over medium-high heat.
Step 4

Thread the chicken onto the skewers, leaving a little space between each piece.
Step 5

Grill the chicken for 5-7 minutes per side, or until cooked through and golden brown.
Step 6

Serve with your favorite dipping sauces.
