Thai Coconut-Lemongrass Soup

Thai Coconut-Lemongrass Soup is a popular and delicious Thai soup that is bursting with flavor. Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 2 tablespoons minced fresh ginger root
  • 2 tablespoons minced fresh lemongrass
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1 (14 ounce) can coconut milk
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh basil

Directions

  • Step 1
    Heat the oil in a large saucepan over medium heat. Add the ginger, lemongrass, garlic, turmeric, and cayenne pepper. Cook and stir for 1 minute.
  • Step 2
    Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low and stir in the coconut milk, fish sauce, and brown sugar. Simmer for 15 minutes.
  • Step 3
    Stir in the cilantro and basil. Simmer for an additional 5 minutes, then remove from heat and serve.
