Vietnamese Bún Chả

Bún Chả is a Vietnamese dish consisting of grilled pork patties and white rice vermicelli noodles served in a sweet and savory broth. Ingredients (2 Persons)

  • 2 pounds ground pork or beef
  • 2 tablespoons fish sauce
  • 2 tablespoons sugar
  • 2 tablespoons vegetable oil
  • 1/4 cup minced shallots
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 carrots, julienned
  • 1/2 head napa cabbage, shredded
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh basil
  • 4 cups cooked rice vermicelli noodles
  • 16 ounces fresh bean sprouts
  • 4 limes, quartered

Directions

  • Step 1
    In a large bowl, combine the ground pork or beef, fish sauce, and sugar and mix until well combined.
  • Step 2
    Heat the vegetable oil in a large skillet over medium-high heat. Add the shallots, garlic, and ginger and cook until fragrant, about 1 minute. Add the pork mixture and cook until the pork is no longer pink, about 5 minutes.
  • Step 3
    Stir in the soy sauce, rice vinegar, sesame oil, black pepper, and red pepper flakes (if using) and cook for 1 minute.
  • Step 4
    Stir in the carrots, cabbage, cilantro, mint, and basil and cook until the vegetables are tender, about 5 minutes.
  • Step 5
    Divide the cooked rice vermicelli noodles among 4 bowls. Top with the pork mixture and bean sprouts. Serve with lime wedges.
