  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground turmeric
  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 2 cups beef broth
  • 1 14-ounce can coconut milk
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh cilantro or parsley

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, cumin, coriander, garam masala, and turmeric. Cook for 1 minute, stirring constantly.
  • Step 3
    Add the beef and cook, stirring frequently, until lightly browned, about 5 minutes.
  • Step 4
    Add the beef broth, coconut milk, sugar, salt, and pepper. Bring to a boil, reduce heat to low, cover, and simmer for 1 hour.
  • Step 5
    Stir in the cilantro or parsley and serve.
