Thai Red Curry

Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 1/2 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon red curry paste
  • 1 (14-ounce) can coconut milk
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 2 cups cooked jasmine rice
  • 1 red bell pepper, chopped
  • 1/2 head broccoli, cut into florets
  • 1/2 cup frozen peas
  • 1/2 cup carrots, chopped
  • 1/4 cup basil leaves, chopped

Directions

  • Step 1
    Heat oil in a large skillet over medium-high heat. Add onion and garlic and cook until softened, about 3 minutes.
  • Step 2
    Stir in the red curry paste and cook for 1 minute, until fragrant.
  • Step 3
    Pour in the coconut milk, fish sauce, and brown sugar and bring to a simmer.
  • Step 4
    Add the bell pepper, broccoli, peas, and carrots and simmer for 10 minutes, until vegetables are tender.
  • Step 5
    Stir in the cooked rice and cook until heated through.
  • Step 6
    Garnish with basil leaves and serve.
