Vegetable Korma Curry

Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 cup vegetable stock
  • 1 (14-ounce) can diced tomatoes
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 (15-ounce) can green beans, drained and rinsed
  • 1 (15-ounce) can corn, drained and rinsed
  • 1 (15-ounce) can peas, drained and rinsed

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, coriander, cumin, garam masala, turmeric, and cayenne pepper and cook for 1 minute, until fragrant.
  • Step 3
    Stir in the vegetable stock, tomatoes, chickpeas, green beans, corn, and peas. Simmer for 15 minutes, until the vegetables are tender and the sauce has thickened.
  • Step 4
    Serve warm over cooked rice or with naan bread.
