Eel Nigiri Sushi

Eel Nigiri Sushi is a type of sushi that consists of a slab of cooked eel, called anago or unagi, that is placed atop a bed of vinegared sushi rice. The eel is usually glazed with a sweet and savory sauce, and may be garnished with a sprinkle of sesame seeds. This popular sushi dish is often found in Japanese restaurants and sushi bars. It is a delightful way to enjoy the fresh, sweet flavor of eel, as well as the nutty, tangy flavor of the sushi rice.

Ingredients (2 Persons)

  • 2 tablespoons sesame seeds
  • 1/2 cup sushi rice
  • 1 teaspoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons sake
  • 1/2 teaspoon mirin
  • 2 eel fillets, cooked and sliced into strips

Directions

  • Step 1
    In a small skillet over medium heat, toast the sesame seeds until golden brown. Remove from the heat and let cool.
  • Step 2
    In a medium saucepan, combine the sushi rice, 2 tablespoons water, the rice vinegar, sugar, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes. Remove from the heat and let sit for 5 minutes.
  • Step 3
    In a small bowl, combine the sake and mirin. Drizzle the mixture over the cooked sushi rice and stir gently to combine.
  • Step 4
    To assemble the nigiri sushi, place a strip of cooked eel on top of a ball of sushi rice. Sprinkle with the toasted sesame seeds and serve.
