Cucumber Roll Sushi

Cucumber roll sushi is a type of sushi roll that consists of thin slices of cucumber wrapped in a thin sheet of nori (seaweed) and sometimes sushi rice. This type of sushi is a popular vegan option and is often served as an appetizer at Japanese restaurants. The cucumber roll is also a great way to add crunch and texture to a sushi platter.

Ingredients (2 Persons)

  • 2 cucumbers, peeled and cut lengthwise into strips
  • 1 cup cooked sushi rice
  • 1/4 cup mayonnaise
  • 2 tablespoons black sesame seeds
  • 2 tablespoons white sesame seeds
  • 2 tablespoons soy sauce

Directions

  • Step 1
    Lay the cucumber strips out on a flat surface. Spread a thin layer of cooked sushi rice onto each strip, leaving a 1/2-inch margin on each end.
  • Step 2
    Spread a thin layer of mayonnaise onto the rice on each strip and sprinkle with sesame seeds.
  • Step 3
    Starting at one end, roll the cucumber strip tightly around the rice. Place the roll onto a plate and repeat with the remaining ingredients.
  • Step 4
    In a small bowl, mix together the soy sauce, rice vinegar, mirin, and sugar until the sugar has dissolved. Serve the cucumber roll sushi with the dipping sauce.
