Indonesian Gudeg

Ingredients (2 Persons)
- 1 pound jackfruit, peeled and cut into small pieces
- 1 tablespoon coconut oil
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon cumin
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 teaspoon sea salt
- 2 stems lemongrass, crushed
- 1 (14-ounce) can coconut milk
- 1/2 cup water
- 1 tablespoon palm sugar or light brown sugar
- 1/4 cup diced shallots
- 1/4 cup diced tomatoes
- 1/4 cup diced long beans
Directions

Step 1
Heat the coconut oil in a large skillet over medium heat. Add the jackfruit and cook for 5 minutes, stirring occasionally.

Add the turmeric, coriander, cumin, garlic, ginger, salt, and lemongrass and cook for 2 minutes, stirring to combine.

Add the coconut milk, water, palm sugar, shallots, tomatoes, and long beans. Increase the heat to medium-high and bring the mixture to a simmer. Reduce the heat to low and simmer, stirring occasionally, for 25 minutes, or until the jackfruit is tender and the sauce has thickened.

Serve hot with steamed white rice and a side of sambal oelek.
