Kimchi Fried Rice

Kimchi fried rice is a popular Korean dish made with steamed rice, kimchi, and other ingredients such as diced vegetables, meat, and eggs. It can be served as a main dish, side dish, or as part of a larger meal. The dish is easy to make and can be enjoyed either hot or cold. Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 2 cups cooked white rice
  • 1/2 cup kimchi, diced
  • 1/2 cup frozen peas and carrots
  • 2 tablespoons low sodium soy sauce
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sesame oil
  • 2 scallions, diced (optional)

Directions

  • Step 1
    Heat the vegetable oil in a large skillet over medium-high heat. Add the cooked rice and kimchi and cook for 5-7 minutes, stirring occasionally, until the rice is lightly browned.
  • Step 2
    Add the frozen peas and carrots and cook for an additional 2-3 minutes until the vegetables are heated through.
  • Step 3
    Stir in the soy sauce, black pepper, and sesame oil. Cook for 1-2 minutes, until the sauce is evenly distributed.
  • Step 4
    Stir in the scallions (if using). Serve hot and enjoy!
