Coconut Curry Noodle Soup

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 ounces) full-fat coconut milk
  • 4 cups chicken broth
  • 2 tablespoons fish sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 8 ounces wide rice noodles
  • 1 cup frozen peas
  • 1/2 cup cilantro leaves, chopped

Directions

  • Step 1
    Heat the oil in a large saucepan over medium heat. Add the garlic and ginger to the pan and cook until fragrant, about 1 minute.
  • Step 2
    Stir in the red curry paste and cook for 1 minute more.
  • Step 3
    Pour in the coconut milk and chicken broth, then stir in the fish sauce, sugar, and salt.
  • Step 4
    Bring the mixture to a simmer and cook for 10 minutes.
  • Step 5
    Add the rice noodles to the soup and cook for 8 minutes, or until the noodles are tender.
  • Step 6
    Stir in the frozen peas and cilantro leaves and cook for 1 minute more.
  • Step 7
    Serve the soup hot.
