  • 4 cups chicken broth
  • 2 tablespoons fish sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 8 ounces wide rice noodles
  • 1 cup frozen peas
  • 1/2 cup cilantro leaves, chopped

Directions

  • Step 1
    Heat the oil in a large saucepan over medium heat. Add the garlic and ginger to the pan and cook until fragrant, about 1 minute.

    Stir in the red curry paste and cook for 1 minute more.

    Pour in the coconut milk and chicken broth, then stir in the fish sauce, sugar, and salt.

    Bring the mixture to a simmer and cook for 10 minutes.
