Malaysian Laksa Noodle Soup

- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 2 shallots, minced
- 1 tablespoon grated ginger
- 1 teaspoon turmeric
- 2 tablespoons curry powder
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1 can (14 ounces) coconut milk
- 2 cups vegetable broth
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 2 tablespoons lime juice
- Salt and pepper to taste
- 4 ounces dried rice noodles
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh Thai basil
- 1/4 cup chopped fresh mint leaves
Directions

Step 1
Heat the oil in a large pot over medium heat. Add the garlic, shallots, ginger, turmeric, curry powder, coriander, and cumin and cook, stirring constantly, for 1 minute.

Stir in the coconut milk, broth, fish sauce, brown sugar, and lime juice. Bring to a simmer and cook for 10 minutes.

Add the noodles to the soup and cook until they are tender, about 5 minutes. Season with salt and pepper, to taste.

Divide the soup among bowls and top with cilantro, Thai basil, and mint.
