Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 tablespoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cayenne pepper
  • 4 boneless, skinless chicken breasts, cut into cubes
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (14 ounce) can coconut milk
  • Salt and pepper, to taste

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Stir in the garlic, curry powder, turmeric, cumin, coriander, ginger, and cayenne pepper and cook for 1 minute.
  • Step 3
    Add the chicken and cook until lightly browned, about 5 minutes.
  • Step 4
    Stir in the diced tomatoes and coconut milk, season with salt and pepper, and bring to a simmer. Reduce heat to low and simmer until the chicken is cooked through, about 10 minutes.
  • Step 5
    Serve over cooked rice, if desired.
