Ingredients (2 Persons)

  • 3 cups cooked sushi rice
  • 1/2 cup chopped cucumber
  • 1/2 cup cooked edamame beans
  • 1/4 cup chopped carrots
  • 1/4 cup chopped red pepper
  • 1/4 cup cooked sweet corn kernels
  • 2 tablespoons sesame seeds
  • 2 tablespoons rice vinegar
  • 2 tablespoons tamari
  • 1 tablespoon sugar

Directions

  • Step 1
    In a large bowl, mix together the sushi rice, cucumber, edamame beans, carrots, red pepper, sweet corn, and sesame seeds.

    In a separate bowl, mix together the rice vinegar, tamari, and sugar.
  • Step 3
    Pour the vinegar mixture over the sushi rice and mix until everything is evenly coated.
  • Step 4
    Spread the sushi rice mixture into an 8-inch round cake pan, pressing it down firmly into the pan.
  • Step 5
    Cover the pan with plastic wrap and refrigerate for at least one hour.
  • Step 6
    Remove the sushi cake from the pan and cut into 8 slices.
