Mushroom & Coconut Curry

- 2 tablespoons coconut oil
- 1 large onion, diced

- 1 red bell pepper, diced
- 1 pound mushrooms, sliced
- 2 tablespoons curry powder
- 2 teaspoons ground cumin
- 1 teaspoon ground turmeric
- 1 (14-ounce) can full-fat coconut milk
- 1/4 cup chopped fresh cilantro
- Salt and pepper, to taste

Step 1
Heat the coconut oil in a large skillet over medium heat. Add the onion, garlic, and ginger and cook for about 5 minutes, until the onion is softened.

Add the bell pepper and mushrooms and cook for an additional 5 minutes, until the vegetables are softened and the mushrooms have released their liquid.

Stir in the curry powder, cumin, and turmeric and cook for 1 minute, until the spices are fragrant.

Pour in the coconut milk and bring the mixture to a simmer. Cook for an additional 5 minutes, until the sauce has thickened.
