Vegan Spicy Tuna Sushi Roll

Ingredients (2 Persons)

  • 1 package of vegan tuna
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 2 tablespoons vegan cream cheese
  • 4 sheets nori seaweed
  • 4 cups cooked sushi rice
  • 1 cucumber, cut into thin strips

Directions

  • Step 1
    In a bowl, mix together the vegan tuna, mayonnaise, sriracha, and vegan cream cheese.
  • Step 2
    Lay a sheet of nori on a flat surface. Spread 1 cup of sushi rice on the nori, leaving a 1-inch border on the top and bottom of the sheet.
  • Step 3
    Spread 1/4 of the vegan tuna mixture over the rice, leaving a 1-inch border on the top and bottom of the sheet.
  • Step 4
    Lay 1/4 of the cut cucumber strips over the vegan tuna.
  • Step 5
    Fold the bottom edge of the nori up and over the filling, then continue to roll the nori until a complete roll is formed.
  • Step 6
    Repeat with the remaining ingredients until 4 rolls are formed.
