Butter Chicken Curry

Ingredients (2 Persons)

  • 1/2 cup butter
  • 1 teaspoon garlic, minced
  • 2 tablespoons ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 4 boneless, skinless chicken breasts, cut into cubes
  • 1 (14.5 ounce) can of diced tomatoes
  • 1 cup plain yogurt or coconut milk
  • 1/4 cup fresh cilantro, chopped

Directions

  • Step 1
    In a large skillet over medium heat, melt the butter and add the garlic and ginger. Cook until fragrant, about 2 minutes.
  • Step 2
    Add the cumin, coriander, garam masala, paprika, turmeric, salt, black pepper, and cayenne pepper. Cook for 1 minute, stirring constantly.
  • Step 3
    Add the chicken cubes and cook until they are lightly browned, about 5 minutes.
  • Step 4
    Add the diced tomatoes and cook for 5 minutes, stirring occasionally.
  • Step 5
    Stir in the yogurt or coconut milk and bring the mixture to a simmer. Cook for 10 minutes or until the chicken is cooked through.
  • Step 6
    Stir in the fresh cilantro and serve with cooked rice or naan.
